I love all the memories we are making with these kids and friends! The kids love each other so much and get along great. Of course, we had to take our friends to our favorite KOA, Thompson/Grand River thompson. Last year we all went to Shelby KOA https://shelbymansfieldkoa.com together, which is amazing as well, but this year we wanted to switch it up.

We divided the meals between the three families, which was the way to go. I provided all the breakfast food, and the other two families split the dinners each night.

For Breakfast I made two of my favorite casseroles. This was more difficult than expected. The grills weren’t working great, they would either heat up too much or not enough. I don’t think I’d recommend making these out camping, unless you either pre-cook it the night before you left for camping, or if you have a good oven in your camper. Though despite a few undercooked spots, and burned spots, the casseroles were still a big hit.

Kelseys’ Moms Casserole: (Modified slightly from original recipe) 

• 1 pkg 12 oz each pork sausage                                                                                                                  
• 1 package frozen hash brown potatoes with onions & peppers (You could also use fresh peppers & onions)                                                                                                                                        
• 2 cups shredded cheddar cheese                                                                                                                    
• 1 cup original Bisquick mix                                                                                                                                      
• 2 cups milk                                                                                                                                 
• 1/4 tsp pepper                                                                                                                                            
• 4 large eggs

Heat oven to 400 degrees. Spray 13 x 9 inch glass cooking dish with cooking spray. In skillet cook sausage (and bell pepper & onions, if using) until sausage is no longer pink, then drain. Mix sausage, potatoes and 1 1/2 cups if cheese in baking dish. In medium bowl mix bisquick, milk, pepper, and eggs until blended. Poor into baking dish. Bake uncovered 40 to 45 mins (I’d recommend covering if cooking on the grill). Sprinkle with remaining 1/2 cup cheese then bake until cheese is melted. Cool for 5 mins before serving

We had a smoker and spent all day Saturday smoking a brisket. When I saw “we” I mean the dads. What a treat! This was worth the effort to bring the smoker out to the campsite. Delicious! (Below picture does not do it justice, lol).
