Another successful trip under our belt! This time we were lucky enough to have some company! Our friends Crystal and Kevin and their two little boys (who happen to be close in ages with our monkeys) came with us!
They were actually the ones who introduced us to this amazing campground! This place has it all! I am not sure where to even begin… swimming, paddle boats, parades, bounce pad, multiple playgrounds, peddle bike rentals, cafe, ice cream… want more? Wine tasting, chocolate pudding slide and foam machine for the kids…
The campground dedicates a theme for each weekend, our theme was “Death by Chocolate” … I may have overindulged slightly… isn’t that what camping and time with friends and family is all about anyway 🙂 …
The First Supper!
Taco Salads
Crystal gave me the idea of prepping the taco meat the night before, so all we had to do was heat it and serve it up with all the fixings!
Taco Seasoning
Ingredients:
- 1 Tbsp Chili Powder
- 1 1/2 tsp Cumin
- 1 1/2 tsp Paprika
- 1 tsp Oregano
- 1 tsp Salt
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4 tsp Cayenne Pepper
Brown 1 pound of ground beef. Once browned, mix seasoning with 1/2 cup of water, mix well. Add to meat and bring to a boil, mix. Cook until thickened.

SNACK TIME!
White Chocolate and Cinnamon Quesadillas
Ingredients:
- Flour Tortillas
- White Chocolate (finely chopped)
- Ground Cinnamon
- Butter (or cooking spray if your trying to save some calories)
Butter tortillas, add white chocolate and sprinkle with cinnamon.
*Tip #1: Use quality white chocolate.
*Tip #2: The more cinnamon the better 🙂
